How the numbers are worked out
Roast times follow the USDA Food Safety and Inspection Service charts for a 325°F oven, filled in between the weight bands so a 15.6 lb bird gets its own answer rather than a range. Safe temperatures are the USDA minimums: 165°F for poultry, 145°F with a three-minute rest for whole cuts of pork, beef and fresh ham, and 140°F for reheating a fully cooked ham.
Cup-to-gram weights use King Arthur Baking’s published ingredient weight chart, and rice ratios start from the absorption rate of each grain plus the small amount that steams away from a lidded pot.
Every calculator runs in your browser the moment you change a number. The one AI feature, the ask-a-cook box on the substitution pages, only runs when you press Ask.
