  1. Match the job, not the name. Ask what the ingredient does in this recipe: lift, fat, moisture, acidity, binding or flavour. Then pick a swap that does the same job.
  2. Swap one thing at a time. Two substitutions in the same bake make it hard to tell what went wrong.
  3. Baking is stricter than cooking. A soup forgives almost anything; cakes and breads depend on ratios of flour, fat, liquid and leavening.
